Mung Bean Dessert (Bubur Kacang Hijau)



Ok, another one of my old recipe... simple but delicious. Now as everything is so expensive, time to save some money and cook this dessert yourself ;). I don't have a picture for this recipe, so I just borrowed the picture from a recipe book.

Cooking time: 1 hour



Ingredients

1/2 cup mung beans / kacang hijau (washed)
a pinch of salt
water (enough to cover
2 pandan leaves ( or can also use pandan essence)
1 cup coconut milk
1/2 cup gula melaka / palm sugar


Methods
  1. Boil the mung bean with water until soften.
  2. Add in salt and pandan leaves (or pandan essence) and let it simmers for about 10min.
  3. Pour in coconut milk and the palm sugar. Stir slowly while simmering.

  4. Serve either hot or cold.
Variations
Add some durian flesh in the porridge during boiling to add flavour ( if you like durian hehehe) or some sweet potatoes to add some variety.
Some people also add some ginger during boiling - good for "buang angin" (what's buang angin in english?? remove wind? anyone can help? )

Serve: 4 persons
