Magic Peanut Butter Middles

Another simple cookies recipe that I have tried. Very sweet. My daughter likes it very much.

Magic Peanut Butter Middles

200g flour
40 g cocoa powder
½ tsp baking soda
1 tsp baking powder
100 g white sugar
110 g packed brown sugar
115 g butter, softened
65 g peanut butter (crunchy)
1 tsp vanilla extract
1 egg

For the filling

90 g icing sugar
195 g peanut butter (creamy)

How to make:

1. Sift together flour, cocoa powder, baking soda and baking powder until well mix.

2. In bowl mixer, cream butter, peanut butter, white sugar and brown sugar until fluffy. Add vanilla essence and egg. Mix in the dry ingredients to the butter mixture.

3. For Filling: Mix peanut butter with icing sugar until well blended.

4. The cookie dough should be easy to mould with your fingers. Take 1 tbsp of the cookie dough and flatten it with your fingers. Fill in with 1 tsp of the filling and cover completely. Flatten the dough and place on baking tray ( remember to place them about 1-2cm apart )

5. Bake at 190C for 9 minutes.

Simple but very nice cookies especially for peanut butter lovers.
