An Eye in a Hole

I found this great recipe for breakfast. Very easy to make and tastes yummy too. Can surprise daddy during this Father's Day or just a great variation to the boring looking bread, cheese and egg breakfast.

Prep Time:10 min
Total Time:30 min

Servings: 4, one sandwich each

Ingredients
8 slices bread
1 tbsp. margarine, softened
3/4 cup Cheddar Cheese, grated
4 eggs

Method

  1. Preheat oven to 200°C.
  2. Cut hole in center of each of 4 of the bread slices, using 1-1/2-inch cookie cutter or rim of drinking glass.
  3. Set cut-out bread slices aside. Discard removed bread circles or reserve for another use.
  4. Spread remaining bread slices with margarine. Place, margarine-sides down, in a baking tray. Sprinkle cheese on top of the bread.
  5. Top with cut-out bread slices to make four sandwiches.
  6. Break 1 egg into each hole. Sprinkle with remaining cheese.
  7. Bake 15 to 20 min. or until cheese is melted and eggs are set.
Variations:
Can also sprinkle shreded bacon together with the cheese for added flavour.

Banana Pancake


Prep Time:10 min
Total Time:20 min


Ingredients
1 cup self rising flour
3 tbsp quick-cooking oats, uncooked
2 tbsp sugar
pinch of salt
1 tbsp oil
3 tbsp milk powder
1 egg
2 medium banana, sliced
enough water to make batter (about 1/2-1 cup)


Method
  1. Heat non-stick pan on medium-low heat. Meanwhile, mix all ingredients, except banana, in medium bowl with wire whisk until well blended. Stir in banana slices.
  2. Ladle batter into hot pan, using 1/4 cup batter for each pancake. Cook until bubbles form on top, then turn to brown other sides.


Tips
If you don't have self rising flour, you can also use wheat flour mix with 2 tsp of baking powder.
You can also add some cinnamon powder with/out nutmeg to add flavour.
You can also use 1 cup of low fat milk to replace the milk powder and water.

Variations
Serve with reduced calorie syrup, if desired.
